Comfort Food

The very concept of comfort food has taken on a whole new meaning this week. Food has always been a balm in difficult times – across cultures, in families and among strangers. For most of us I imagine this is the first time we are living through the anxiety and uncertainty related to a pandemic.

I am obviously not a health care professional, so I encourage you to follow all the guidelines laid out by the experts both nationally (Centers for Disease Control) and locally (MN Department of Health.)

One way I can help, is to provide a long list of easy, comforting recipes for you and your family to access in the coming weeks. Many of these – including my take on a St. Patrick’s Day favorite Shepherd’s Pie, can be made from ingredients you have in your house. If you are able, make a double batch and offer to deliver a meal to a needy neighbor – I’m finding it a small way to reach out and share some comfort.

Since we will be celebrating the official KilKenney Kitchen holiday tomorrow in our own kitchens – I invite you to whip up a bubbling hot casserole pan of this delicious Irish Classic. And remember… our tagline here at KilKenney Kitchen is “Where good food meets real life” so change up the dish based on what you have on hand, and what your family finds most comforting.

Take good care of yourselves and each other – I’ll focus in the coming weeks on recipes that are easy to make and take advantage of ingredients you likely have on hand.
