The Next Chapter

And so it begins. I left my role as the Director of Human Resources at United Family Medicine last week. After 35 years of fun and interesting jobs in HR, I am grateful, ready, excited, and, truth be told, more than a little nervous, to turn this page.

It’s oddly awkward to describe exactly what it is I’ve done. I didn’t retire per se, but “resigned” sounds like I gave up and “quit” feels like I was angry, neither of which is true. So I’ve decided to say I’ve entered my next chapter – it’s new, but familiar and not quite clear how the story will unfold – that feels about right.

There are a few things I know about this next chapter. It’s set in KilKenney Kitchen (my happy place) and will include more delicious, gluten free recipes. An updated website will launch on St. Patrick’s day (the official holiday of KilKenney Kitchen). I will dabble in some new cooking platforms including video and the dreaded Zoom and I will continue to offer cooking classes and meals that bring people together. This new chapter will also involve making food to share with those who need it.

Beyond these few knowns, the new chapter remains a mystery. I am taking a series of classes in Ayurveda at Normandale College and devouring the writings of Mark Bittman. I love delving into the mind/body/spirit connection, particularly as it relates to food and I expect to share more plant-based and Ayurvedic recipes and musings in the coming months.

I invite you to peruse this new chapter with me and, as always, to share your thoughts, ideas, questions and feedback – we can write the cookbook together. (Hmmm – maybe the new chapter includes a cookbook – wouldn’t that be fun?)

Today, though, as we brace ourselves for the coldest weekend in 27 years here in Minnesota, I am happy to share a new recipe that will warm both your kitchen and your soul.

These Cast Iron Chicken Thighs are hearty, delicious and a cinch to make. Dig out that cast iron pan, clean it up and give them try – you’ll be glad you did. Enjoy and stay warm.
