Kind of like me these days!  My hair is officially gray and I’m becoming fast friends with my wrinkles, laugh lines and achy joints – what’s not to love?

One of the benefits of being a woman of a certain age is taking time to travel. Last week Bill and I enjoyed a fabulous few days in LA with my sister Sarah, sister-in-law Laurene and their son Vladimir.  The sunny warm weather was a lovely respite from the long Minnesota winter.

In our wanderings around the city, we found a terrific cookbook store called Now Serving in Chinatown.  It’s a lovely little shop full of culinary items along with hundreds of new and previously owned cookbooks.  I picked up a “vintage” (1977 – yikes!) copy of an old favorite – The Moosewood Cookbook from the restaurant of the same name in Ithaca, NY.

As a teenager and hippie want-a-be, this book was my bible during a brief vegetarian phase that accompanied my overalls and bad hair phases.

As I browsed through the book on the way home, I was immediately drawn to the Spinach and Rice Casserole I remember eating all those years ago.  Now, being me, I adapted the recipe a bit to bring it into the 21st century, but fundamentally it’s the same rich, cheesy, hearty casserole I remember.  Perfect for brunch, lunch or dinner, you’ll want to add this classic to your repertoire.

  1. Funny, I had a vegetarian phase too – tofu burgers the main staple! I’ll try this recipe, sounds good on a cold winter day (like today). My favorite Katzen recipe (from the Enchanted Broccoli Forest) is Mushroom Yogurt Pie. As homage to my veggie days, I make it every year at Thanksgiving, yum!
