Uncle!!

Enough already! We’ve just survived the snowiest February on record and some kind of crazy below zero tie here in Minnesota. It’s an understatement to say we’re ready for spring! For the most part, I’m a snow fan. I’m in the “if it’s going to be this cold, it might as well snow” camp – but I may have met my match this winter.

In The glass half full category – I’ve become a snow blower beast. I looked that thing in the eye last week and pulled the cord. I must admit I felt strong and powerful as I tackled that long, long driveway three times in the last month.

I took charge in the kitchen in February too. The long, cold, snowy nights practically begged for some hearty delicious soup. This Winter Squash Soup with Lemongrass ticked all the boxes. Smooth, savory and full of flavor, this one’s a winner. The complex flavor of the lemongrass coupled with the rich, creamy coconut milk makes for the perfect chilly night meal.

Whip up a big pot this week – it will warm your bones – after all it’s got to be spring soon, right?
