Honey Glazed Carrots
Sweet and flavorful, this recipe takes farmer's market carrots to a new level. They will disappear quickly!
Ingredients
- 1 bunch fresh baby carrots
- 2 tablespoons honey
- 1 tablespoon brown sugar
- 2 tablespoons butter
- 2 large cloves garlic smashed
- 1 pinch kosher salt
- 1 pinch ground black pepper
- 4-5 sprigs fresh thyme or a pinch of dried thyme
Instructions
- Heat the oven to 400 degrees
- Grab some beautiful carrots from your favorite farmer's market
- Cut the tops off the carrots, leaving an inch or so and peel them. Place them on a sheet pan lined with parchment paper. You can sauté the green tops with some olive oil and a pinch of red pepper flakes for another great side dish
- Place the honey, brown sugar, butter, garlic cloves and salt in a small saucepan.
- Heat the honey, butter, brown sugar, garlic cloves and salt in a small sauce pan. Stir to be sure the sugars melt and combine
- Remove the garlic cloves and pour or brush the honey-butter mixture onto the carrots, turning to coat all sides, Sprinkle the thyme on top
- Roast the carrots until they are just tender - turning once to ensure an even roast - 25 to 30 minutes
- Serve on a pretty platter with all your favorite summer foods
