Simply Summer

It always feels like summer has settled in after the Fourth of July weekend.  Long hot days flow into beautiful sunsets and slightly cooler nights.

KilKenney Kitchen garden is beginning to produce copies amounts of kale and Swiss chard along with these pretty peppers you’ll see in this week’s recipe.  My tomatoes, on the other hand, are a hot mess – tackling that is on the docket this weekend.

I believe summer nights call for super simple recipes that showcase local produce.  Whether you frequent your favorite farmers market, grow your own or enjoy your neighbors (kale anyone?), it’s a bounty.  This Salsa Chicken recipe fresh, delicious and a snap to make.  If you are short on time, you can make it even quicker by using a good jar of salsa.

I invite you to whip up a batch this week – make it a double – it’ll go fast.
