A Kernel of Care

August is corn season here in the upper midwest – coming out of our ears (couldn’t resist that one) There is nothing like fresh corn on the cob, and this year when you buy some, you will provide much-needed support to your local farmers as well.

Like all of us, the pandemic has kicked local farms in the gut. So many count on farmer’s markets and roadside stands to make ends meet. Many people are, understandably, not venturing out to the market this summer due to the virus and the result is lower sales for many farmers.

In my own personal data gathering, I have found all my favorite farmer’s market’s around town including: St. Paul, Minneapolis, Mill City and Midtown to be well run, clean and enforcing excellent COVID-19 protocols. Some farmers are getting creative and offering delivery of produce straight from the farm. Check out one of my favorites the Hang Family’s site.

I encourage you to support your local farmers at the market, roadside stands and/or with delivery and buy an extra dozen ears of corn if you can.

This recipe for Fresh Corn Salsa is an outstanding way to use up the extra corn. Spicy and delicious, it will become a regular in your kitchen too. I wasn’t able to get a picture of it on the plate with the tacos because it disappeared so fast!
