Best Laid Plans…

“Of mice and men Gang aft a-glay” so the poem by Robert Burns goes.  Roughly translated – the best laid plans of mice and men can still go wrong.

This is an apt quote for me this month.  I have the pleasure of cooking three meals a week for a client family this spring and it makes me happy.   I love planning the menus, tailoring the food to their tastes and creating delicious meals each Monday.

Where the best laid plans part goes awry is my brilliant plan to create duplicate meals for Bill and myself each week – seems like a no brainer, right?.  Somehow though, I just don’t get it all organized to put those delicious meals on our table.

I remember to purchase separate groceries but I can’t seem to turn them into lovely packaged meals for our refrigerator like the ones I send out.  I often make the recipes again later in the week, so it’s not a total loss – but appears I’m a little slow on the uptake. Ah well, practice makes perfect – right?  Every week has a new Monday and opportunity to get it together.

I did manage to take pictures of a decidedly delicious dish last week that I’d like to share with you today. It’s not perfectly plated but you’ll get the idea.

These Tuna Steaks with Thyme could not be easier, quicker or more perfect for summer.  All you need is a few wild-caught tuna steaks, a couple of lemons, some good olive oil and a pinch of thyme.  Add some mixed greens and you’ll have dinner on the table in less than 30 minutes.
