OK – I had to check my trusty thesaurus for this one – An “M” word that means “fast” and pairs well with Mexican was not at the tip of my tongue. As someone who is slightly serious about alliteration, it’s a regular occurrence.
I have to say this Mexican Chopped Salad solved a plethora of problems for me this week. I needed a quick dish for a Cinco de Mayo party on Saturday and, in a just in time kind-of way, a recipe for the blog today. Luckily, this 15-minute, beautiful and incredibly delicious Mexican Chopped Salad checked all the boxes. Bill and I enjoyed it for dinner last night with a grilled pork tenderloin and I’ll make another to share with friends this weekend – Eureka!
