Shrimp with Tomatoes and Feta

This super quick, full of flavor dish is the perfect weeknight solution. Ready in about 10 minutes, it goes with anything from rice to quinoa to pita bread. You'll want to add this to your regular recipe rotation

Ingredients

  • 1 pound large raw shrimp peeled and deveined
  • 1 large clove garlic pressed or minced
  • 1/2 teaspoon dried oregano
  • 1 pinch kosher salt
  • 1 pinch ground black pepper
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons extra virgin olive oil
  • 1 medium tomato
  • 1/4 cup crumbled feta cheese
  • 1/4 cup fresh parsley optional

Instructions

  • Preheat the broiler to high or set the grill to medium-high
  • Mix the pressed garlic, oregano, salt, pepper, lemon juice and olive oil in a small bowl
  • Pour the mixture over the shrimp and give it a stir. Let it marinate for a minute while you chop the tomato
  • Chop the tomato
  • Spread the marinated shrimp on a sheet pan
  • Broil (or grill) the shrimp for 2 minutes per side or until pink and firm
  • Sprinkle the tomatoes and crumbled feta on the hot shrimp
  • Sprinkle with the fresh parsley and serve with some quinoa, rice or a piece of lovely bread and enjoy! A glass of white wine never hurts
