Farm fresh and perfect for any summer meal, this will become a family favorite
Roasted Potatoes and Onions
Beautiful baby potatoes and sweet young onions make for an easy, delicious summer side dish.
Ingredients
- 1 pound baby red potatoes
- 1 bunch small sweet onions
- 1 sprigs fresh thyme or 1/2 teaspoon dried thyme
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 pinch kosher salt
- 1 pinch ground black pepper
Instructions
- Preheat the oven to 400 degrees
- Grab those beautiful baby potatoes and sweet onions - ideally at your favorite farmers market
- Grab some fresh thyme (or your favorite herbs)
- Cut the potatoes and onions into 2" pieces and sprinkle with the fresh (or dried) thyme
- Melt the butter and oil together
- Drizzle the butter mixture on the potato and onions`
- Roast the potatoes and onions until toasty and tender - about 40 minutes - check them every 15 minutes or so
- Serve with all summer to all your favorite people
