Healthy, delicious and so pretty – this salad deserves a regular spot on your table.

Thai Crunch Salad

Quick, healthy, gorgeous and so tasty - this one's a keeper

Ingredients

Peanut Dressing

  • 1/4 cup creamy peanut butter
  • 2 tablespoons rice vinegar unseasoned
  • 1 large lime juiced
  • 1/4 cup avocado oil or other vegetable oil
  • 1 tablespoons soy sauce gluten free
  • 2 tablespoons honey
  • 2 large cloves garlic pressed
  • 1 tablespoon fresh grated ginger
  • 1/2 teaspoon salt
  • 1/4 bunch cilantro leaves

The crunchy salad

  • 1 head napa cabbage
  • 1 bag shredded carrots or 2 large carrots shredded
  • 1 bag shredded red cabbage or 1/2 a small red cabbage
  • 1 cup cooked edamame
  • 1 small cucumber peeled, seeded and chopped

Instructions

The Peanut Dressing

  • Mix all of the dressing ingredients in a blender or immersion blender container and blend until smooth - how easy is that?

The Crunch Salad

  • Grab your ingredients - this is a fabulous salad to make with a Trader Joe's haul - quick and easy!
  • Chop and wash the Napa cabbage and place it in a large bowl
  • Add the red cabbage, carrots, edamame and cucumbers - isn't that gorgeous?
  • Mix it up to distribute the vegetables
  • Add about half of the dressing, mix and taste
  • Find some friends (my husband Bill and son Charlie) to finish it up
  • Enjoy with your favorite grilled meats, fish or chicken. Yum and Yum!
