Thai Crunch Salad
Quick, healthy, gorgeous and so tasty - this one's a keeper

Ingredients
Peanut Dressing
1/4
cup
creamy peanut butter

tablespoons
rice vinegar
unseasoned

lime
juiced

avocado oil
or other vegetable oil

tablespoons
soy sauce
gluten free

tablespoons
honey
2
large cloves
garlic
pressed

tablespoon
fresh grated ginger

teaspoon
salt

bunch
cilantro leaves
The crunchy salad
1
head
napa cabbage
1
bag
shredded carrots
or 2 large carrots shredded
1
bag
shredded red cabbage
or 1/2 a small red cabbage
1
cup
cooked edamame
1
small
cucumber
peeled, seeded and chopped
Instructions
The Peanut Dressing
Mix all of the dressing ingredients in a blender or immersion blender container and blend until smooth - how easy is that?
The Crunch Salad
Grab your ingredients - this is a fabulous salad to make with a Trader Joe's haul - quick and easy!
Chop and wash the Napa cabbage and place it in a large bowl
Add the red cabbage, carrots, edamame and cucumbers - isn't that gorgeous?
Mix it up to distribute the vegetables
Add about half of the dressing, mix and taste
Find some friends (my husband Bill and son Charlie) to finish it up
Enjoy with your favorite grilled meats, fish or chicken. Yum and Yum!
