Cauliflower Mash

Cauliflower Mash

This healthy side dish is creamy and delicious. A touch of parmesan cheese and bacon makes it a winner

Ingredients

  • 4-5 slices bacon cooked crisp
  • 1 head cauliflower cut into florets
  • 4 cloves garlic pressed or minced
  • 1/2 cup milk or more if needed
  • 2 -4 ounces Parmesan cheese grated
  • 1 tablespoon butter
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper

Instructions

  • Preheat the oven to 350 degrees
  • Cook the bacon until it's nice and crisp. Set aside
  • Place the cauliflower florets and minced garlic in a large pan of salted water. Bring to a boil and cook for 20 minutes or until the cauliflower is tender and soft
  • Drain the cauliflower/garlic
  • Return the cauliflower to the pan, add the butter and milk
  • Using a hand mixer or immersion blender, blend the cauliflower until it looks like mashed potatoes - about 3 minutes
  • Grate the parmesan - I use about 2 ounces for this recipe, but feel free to add more if you like
  • Add the parmesan cheese, salt and pepper and give it a stir
  • Spray or butter a baking dish
  • Place the cauliflower and parmesan mixture into the baking dish. Cover with the crumbled bacon slices
  • Bake until hot - about 15 minutes. Serve with chicken, beef pork and/or fish. Enjoy the leftovers all week long.
