Preheat the oven to 350 degrees
Cook the bacon until it's nice and crisp. Set aside
Place the cauliflower florets and minced garlic in a large pan of salted water. Bring to a boil and cook for 20 minutes or until the cauliflower is tender and soft
Drain the cauliflower/garlic
Return the cauliflower to the pan, add the butter and milk
Using a hand mixer or immersion blender, blend the cauliflower until it looks like mashed potatoes - about 3 minutes
Grate the parmesan - I use about 2 ounces for this recipe, but feel free to add more if you like
Add the parmesan cheese, salt and pepper and give it a stir
Spray or butter a baking dish
Place the cauliflower and parmesan mixture into the baking dish. Cover with the crumbled bacon slices
Bake until hot - about 15 minutes. Serve with chicken, beef pork and/or fish. Enjoy the leftovers all week long.
