Tastes of Thailand

What an adventure!  Bill and I had the opportunity to travel to Thailand over the last two weeks.  It was an once-in-a-lifetime trip and we enjoyed every minute.  We spent time in Bangkok, Kanchanaburi, Nakhon SI Ayutthaya  and Chang Mai.  We loved all of the sights, sounds, smells and experiences of the trip.  Me being me, all things food-related were the top of my list.

We had the opportunity to meet a wonderful woman and chef, Vanee of Classic Home Cooking in Chang Mai.  She took us to the local market (heaven!) to introduce us to the freshest Thai produce and meat.  We bought all of the ingredients for her cooking class later in the day including fresh coconut milk, Thai basil, bean sprouts, chilies, ear mushrooms, fresh tofu and these gorgeous Thai eggplant.

We then went back to Vanee’s kitchen and cooked four tasty Thai dishes.  A dream come true for this home cook.

Terrific Thai Feast

I am happy to share my favorite of those dishes with you this week – Stir-Fried Chicken with Basil and Chilies (Pad Krapao Gai).  As spicy as you like and flat-out delicious – I think you’ll want to add this “everyday” Thai dish to your kitchen too.
