Go fast to go slow – that’s what this time of year feels like to me. As May comes to a close it brings a burst of activity before the, ideally, more relaxed summer begins.
So many of us are mired in the end of the school year as students, parents and teachers – all those last baseball, softball, lacrosse and tennis matches, the frantic (at least for me) grading of final papers and assignments and a steady push to get it all finished.
I know that cooking can the last thing on the list during this busy time. Soups and stews seem to heavy, salads not quite right yet and those creative juices can be a little low. In an effort to pitch in, I’m happy to bring you one tiny solution with this speedy recipe for Shrimp with Tomatoes and Feta.
This delicious, protein-packed dish can be on the table in about 15 minutes. Grab your favorite bread, rice or quinoa and you’ve got a lovely dinner everyone will love in no time! Double it up and you’ve also got lunch for tomorrow – done and done!
As you can see from the photo, I also find a nice glass of Sauvignon Blanc helps to keep it all in perspective at this time of the year.
