Healthy, delicious and so pretty – this salad deserves a regular spot on your table.
Thai Crunch Salad
Quick, healthy, gorgeous and so tasty - this one's a keeper
Ingredients
Peanut Dressing
- 1/4 cup creamy peanut butter
- 2 tablespoons rice vinegar unseasoned
- 1 large lime juiced
- 1/4 cup avocado oil or other vegetable oil
- 1 tablespoons soy sauce gluten free
- 2 tablespoons honey
- 2 large cloves garlic pressed
- 1 tablespoon fresh grated ginger
- 1/2 teaspoon salt
- 1/4 bunch cilantro leaves
The crunchy salad
- 1 head napa cabbage
- 1 bag shredded carrots or 2 large carrots shredded
- 1 bag shredded red cabbage or 1/2 a small red cabbage
- 1 cup cooked edamame
- 1 small cucumber peeled, seeded and chopped
Instructions
The Peanut Dressing
- Mix all of the dressing ingredients in a blender or immersion blender container and blend until smooth - how easy is that?
The Crunch Salad
- Grab your ingredients - this is a fabulous salad to make with a Trader Joe's haul - quick and easy!
- Chop and wash the Napa cabbage and place it in a large bowl
- Add the red cabbage, carrots, edamame and cucumbers - isn't that gorgeous?
- Mix it up to distribute the vegetables
- Add about half of the dressing, mix and taste
- Find some friends (my husband Bill and son Charlie) to finish it up
- Enjoy with your favorite grilled meats, fish or chicken. Yum and Yum!
