Chopped Salad with Apples and Feta

This is the most popular salad in the Kitchen this year. Loaded with goodness, it's sweet, salty, tangy and totally delicious. I love it with grilled chicken, fish or pork. You'll want to make this over and over.

Ingredients

  • 1 tablespoon champagne vinegar or white wine vinegar
  • 2 teaspoons balsamic vinegar
  • 1 teaspoon dijon mustard
  • 1 teaspoon honey
  • 2 tablespoons lemon juice about 1/2 a lemon
  • 2 tablespoons grape seed oil or walnut oil
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper

The Chopped Salad

  • 1 small head red leaf lettuce or mixed greens
  • 2 cups baby arugula washed and spun dry
  • 1 medium apple chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup toasted walnut pieces finely chopped
  • 1 pinch kosher salt
  • 1 pinch ground black pepper

Instructions

Whip up the Vinaigrette

  • Place the vinegars, mustard, honey, lemon juice, grape seed and olive oils, salt and pepper in a small jar. Cover and give it a good shake.

Mix up the Chopped Salad

  • Grab your red leaf lettuce (or mixed greens) - so pretty!
  • Using a sharp knife, finely chop the lettuce
  • Grab the baby arugula (The Kitchen Owl and I love the Trader Joe's Organic Wild Baby Arugula)
  • Place the arugula on a board. I love the spicy bite the arugula (known as Rocket in Italy) brings to this salad
  • Finely chop the arugula
  • Add the chopped arugula to the chopped lettuce in a large bowl and mix well
  • Peel and chop the apple
  • Add the Feta cheese, chopped apple and toasted walnut pieces (saving a few pieces for later) to the chopped lettuce. Sprinkle with a little salt and pepper
  • Add the vinaigrette and mix well. Taste and adjust the seasonings. A glass of white wine is always helpful in the Kitchen!
  • Serve on a pretty plate with a sprinkle of walnut pieces and enjoy!
