Pickled Red Onions

These quick pickled onions are the perfect addition to tacos, a pulled pork sandwich or a salad.

Ingredients

  • 1/2 cup apple cider vinegar
  • 1 tbsp sugar
  • 1.5 tsp kosher salt
  • 1 medium red onion

Instructions

  • Mix the vinegar, sugar and salt in a jar. Shake well to dissolve the sugar and salt
  • Peel, cut in half and slice the onion into thin slices
  • Submerge the onion slices into the vinegar mixture, cover and soak the onions for an hour (or more) - My Kitchen owl has joined us again!
  • Serve them with tacos, pulled pork sandwiches (see recipe on the blog) or salads. A bright and delicious addition to many dishes.
