Remember that old rhyme…Beans, beans the musical fruit…. Well, as a woman living with Celiac for 30 years, I was a little cautious of the end of that line. As a result, I’ve been missing out on a delicious, healthy and versatile world.
As you probably already know, beans pack a nutritional punch. Full of protein and fiber, they are a budget-friendly staple. I’ve been experimenting with making beans from dry, rather than buying them in can as it’s both less expensive and environmentally friendly. Making a pot of beans is easy and quick, particularly when I use my Instant Pot. As a bonus, I love the ability to create the texture to match the recipe.
This week’s White Bean Soup with Parmesan is a great introduction to the world of beans. It’s a breeze to make, tastes incredible for dinner and even better the next day. Whether you want a rich vegetarian soup or, like me, enjoy a bit of bacon, this one’s a keeper.
