  • 1 tablespoon white miso or brown miso
  • 1 tablespoon rice vinegar unsweetened
  • 2 teaspoons gluten free soy sauce
  • 1 large clove garlic pressed or grated
  • 4 small salmon filets skin on
  • 12 ounces green beans or your favorite green vegetable
  • 1 tablespoon olive oil
  • 1/4 teaspoon sesame oil optional
  • 1 pinch kosher salt
  • 1 pinch ground black pepper
  • 1 pinch red pepper flakes optional

Instructions

  • Preheat the oven to 400 degrees
  • Grab your White Miso - you can find this is most large grocery stores and your favorite Asian Market
  • Mix together the Miso, rice vinegar, soy sauce and garlic in a small bowl
  • Give it a stir to incorporate the miso and garlic
  • Assemble the salmon filets on a large platter and sprinkle with salt and pepper
  • Cover the salmon filets with the miso sauce and let marinade for 15 minutes or so
  • Place the green beans in a large bowl and add the olive oil, sesame oil, salt, pepper and red pepper flakes
  • Arrange the marinated salmon filets and green beans on a sheet pan covered with parchment paper and bake for 15-20 minutes until just done - the salmon should be firm to the touch with a little give
  • Serve with rice or a nice crusty bread and sprinkle with cilantro if you like. This one's a winner!
