Happy Hummus
This quick, healthy, delicious hummus is a regular feature here in KilKenney Kitchen. It's perfect to bring to a party, pot luck or happy hour and receives rave reviews every time I make it. I think it will become an old standby in your kitchen too.
Ingredients
- 4 cloves garlic
- 1 large lemon
- 1/2 cup tahini
- 2 15 oz cans garbanzo beans
- 6 dashes Tabasco sauce
- 1 tsp salt
Instructions
- Peel and chop the garlic
- Zest the lemon and cut the lemon in half
- Bring on the tahini - A savory paste of ground sesame seeds with the consistency of peanut butter. You'll find it in the ethnic foods aisle of most large grocery stores.
- Drain the garbanzo beans and reserve the liquid from the cans
- Add the drained garbanzo beans, garlic, tahini, salt, the zest and juice of the lemon and the Tabasco sauce to a blender with a 1/2 cup of the reserved bean liquid. (Do you like my little kitchen owls?)
- Blend the mixture, adding more reserved liquid, if necessary, until it has a smooth, creamy consistency. (if you run out of reserved liquid, add a little water). Taste the hummus and add more salt or Tabasco as needed. Sprinkle with a little paprika (if you have some on hand) and serve with vegetables or pita chips
