Fresh Corn Salsa
Ingredients
- 3 ears fresh corn
- 1 small jalapeno
- 1/2 small red onion
- 2 small limes
- 1-2 tablespoons White wine vinegar or other light vinegar
- 1/2 cup fresh cilantro chopped
- 1 sprinkle chili powder
- 1 sprinkle cumin
- 1 pinch kosher salt
Instructions
- Cut the kernels off the corn cobs. I like to use a sharp knife and cut toward me (carefully!)

- Chop the jalapeño finely and add as much as you like for spice

- Chop the red onion finely

- Add the jalapeño and red onion along with the lime juice, vinegar, chili powder, cumin and salt to the corn and mix to combine

- Squeeze the limes - I love this citrus press my son Jack gave me for Christmas last year - makes quick work of lemons & limes

- Chop the cilantro

- Add the cilantro to the corn, give it a stir and let it sit for 15-30 minutes

- Taste and adjust the seasonings and enjoy on tacos, salads or sandwiches. YUM!
