First Friday

Welcome to a new day in KilKenney Kitchen.  As I mentioned earlier this week, I will be posting new recipes each Friday along with frequent thoughts about meal planning, tools, tips and techniques. I have to say that mixing things up a bit feels kind of great. I can’t think of a better way to jump into Fridays than with this fantastic Romaine Salad with Orange and Avocado.

Beauty and taste!

I love how the components of this beautiful salad work together.  The crunchy romaine sweet oranges, creamy avocado and toasty pumpkin seeds are combine beautifully with a lovely citrus vinaigrette.  It’s a keeper.

Meal Plan Ideas:  Combine this salad with Tacos Anytime and Savory Rice with Ginger and Cilantro  or a pan of Chicken Enchiladas for a terrific Mexican meal.  It also works beautifully with Pan Seared Chicken or your favorite grilled meat for a quick weeknight dinner.
