Spring in the upper midwest is so fickle. 75 degrees on Wednesday and snowing on Sunday. I had planned a lovely spring grilled chicken platter with vegetables and salad for this weekend’s birthday celebration for Bill at the cabin. Unfortunately, as you can see, the cold sleet and whipping winds had other ideas.
As anyone who’s approached adulthood knows – necessity is the mother of invention. So with the apparent change of seasons this weekend, I quickly got to work on a new plan for the birthday boy. This Penne with Lemony Ricotta joyfully came to the rescue. Easy, quick and full of flavor, this recipe was the perfect way to celebrate Bill while enjoying a fire inside the cabin instead of outside on the Weber.
