Am I the only one that finds it a little annoying when a holiday falls on a Wednesday? Especially the Fourth of July? Somehow campfires and S’mores along with barbecue and burgers just beg for a lazy weekend. Oh well – if that’s the worst of my problems, I’m a lucky woman.
In the spirit of when life gives you lemons…… I want to share an oldie, but goodie recipe that I think fits beautifully with a mid-week summer holiday – the ever popular Tarragon Chicken Salad. I’ve made and shared this salad about 10 times over the last couple of months for catering, family dinners and to share with friends and it was a hit every time.
I think you’ll find that this Tarragon Chicken Salad might just be the ticket for any and all of your holiday festivities next week. It’s perfect for a picnic, easy for entertaining and delicious for dinner with family. It also works wonderfully with rotisserie chicken if you are short on time and can be made ahead and served when you’re ready. The leftovers are fabulous for lunches the rest of the week too – an all around winner!

Hi Maggie, anything you could recommend instead of tarragon? I have never been able to stand the anise flavor of it and many chefs, including Ina Garten use it constantly with chicken. And something besides parsley. I never find much flavor in it, even the Italian parsley which I grow. Thanks for any suggestion you can recommend.

I would recommend some fresh thyme instead of the tarragon. Dried thyme would work too, I suggest adding some, letting the dressing sit in the fridge for a bit and tasting it.
I think it will taste great!
