New Year’s Eve is upon us and between the election and the loss of so many famous, talented baby boomers, some of this year has felt like a kick in the teeth. I, for one, am ready to turn the page.

Yes – it looks beautiful after cooking too, just a much lighter pink.
I usually cook it and chill it before brining to a party. It’s a nice make ahead dish for home or to share with friends.
