Spring muscled its way in like a battering ram this year. The record-breaking heat in the west and midwest is, not only uncomfortable, it’s dangerous and concerning. Climate change is everyone’s problem. I’m working to find ways to reduce my carbon footprint. I welcome any ideas you have to share.
Here in Minnesota, we are in our third week of what my mother used to call “take a cool bath before bed” kind of heat. Like many of you, I’ll be happy when cooler weather arrives tomorrow and I continue to pray for rain for the farmers I speak with each week at the St. Paul market.
Super simple summer suppers (how’s that for alliteration?) have been my go-to this month. I like to fire up the grill (keep that oven off!) and throw tasty meats and vegetables on to cook. These Grilled Chicken Kebabs are just the ticket for a hot summer night. A quick marinade of olive oil and spices and about 10 minutes on a hot grill is all you need for a delicious meal. Make a double batch for a cool, tasty salad for lunch the next day.
