Cheesy Cauliflower

Do you remember that frozen orange cheese-saucy cauliflower by Green Giant? Full discloser – I loved that stuff. Frozen vegetables, particularly those with some sort of sauce, were a regular occurrence in our house growing up. I even admit to an occasional indulgence on a baked potato when I’m home alone – brings me right back.

I’m happy to say, though, that I’ve upped my cheesy cauliflower game and feel great about the upgrade. This Cauliflower Gratin is absolutely fantastic. Cheesy and rich, it’s perfect as a meat replacement, easy enough for a weeknight side dish and beautiful enough for your fanciest dinner party.

I made a big batch of this for Thanksgiving, and people liked it so much, I didn’t get a picture of it on a plate – a true sign of success.

I hope you’ll give this one a try. I think it will please even the pickiest cheesy cauliflower crew.
