  1. Grab your avocado (or olive) oil. I've come to love the light, high smoke temperature of avocado oil. It's easy to cook and can be found in most large grocery stores, Trader Joes' and/or Costco
  2. Heat the oil in a large, deep pan and add the chopped celery and onions (if you want to add chopped carrots, that works wonderfully too)
  3. Sauté the vegetables until they are soft - about 5 minutes, then add the chopped garlic and sauté for another 30 seconds
  4. Add the ground turkey along with the salt and pepper
  5. Sauté, breaking up with a spoon, until the turkey is cooked through - about 7 minutes
  6. Add the spices and cook for a couple of minutes to let the spices toast - it will smell wonderful!
  7. Add the tomatoes - I used one can of regular diced and one can w/chipotle chilies to add some heat
  8. Stir in the tomatoes and cook for a couple of minutes to combine all the flavors
  9. Add the 2-3 cups of chicken broth, beans and tomato paste and bring to a boil
  10. Turn down the heat and simmer until all the flavors have melded - about 20 minutes
  11. Add the can of corn, if using - I love the crunch and color of the corn
  12. Give it a stir and cook for a couple of minutes, until it's hot and bubbly
  13. Serve with your favorite bread, cornbread, or tortilla chips. Feel free to top with scallions, sour cream and/or cheese if you like
