Spicy and delicious, this snappy salsa is a perfect vehicle for that end of summer fresh corn
Fresh Corn Salsa
A perfect way to use up that gorgeous end of summer fresh corn. This salsa packs a punch!
Ingredients
- 4 ears fresh corn on the cob peeled
- 2 medium jalapenos diced
- 1/2 small red onion diced
- 2-3 large limes
- 1 pinch kosher salt
- 1/2 bunch cilantro chopped
Instructions
- Grab your fresh corn, jalapeños and red onion. I got all of these from my local farmers market
- Cut the kernels off of the corn cobs. I like to use a small bowl inside a large bowl and a sharp knife. It keeps the kernels from going all over the kitchen
- Separate the kernels in a bowl and add the diced onion and jalapeño.
- Give it a stir and add the juice of the limes and kosher salt
- Add the chopped cilantro, stir and taste to adjust the seasonings. Let it rest in the refrigerator for a half hour or so to allow the flavors to meld.
- Serve with chips, on tacos or salad - so good!
