There is no better time to say potato (or potahaho for that matter) than when they appear, lined up box after box, at the farmer’s market. As a certified spud fan, I can’t resist those tiny red, yellow and white potatoes. This week, I added a load of fresh garlic (a fantastic treat also found at the St. Paul Farmer’s Market) and a few sprigs of fresh rosemary from my garden to create these lovely Roasted Potatoes with Rosemary.
I encourage you to visit your favorite farmer’s market this weekend, pick up a few potatoes and bunch or two of fresh garlic (it’s worth the the little bit of extra money) and roast away. You’ll be eating these beauties all week.
