Instant Pot Beans

The basics of this recipe can be adapted to any kind of bean. I'll list all my favorites below

Ingredients

  • 1 pound dried pinto beans or your favorite beans
  • 1 large Onion peeled and cut in half
  • 2 large bay leaves
  • 6 cups water

Instructions

  • Grab your instant pot and get ready to roll
  • Rinse the pinto beans and pick out any stones or unwanted beans
  • Add the water, beans, the onion and bay leaves to the instant pot
  • Set the Instant Pot to manual and cook on high pressure for 25 minutes. Be sure the vent is set to sealing. Feel free to adjust the cook time based on how you like your beans - I always go with al dente, so if you want softer, add 5 minutes
  • Turn off the Instant Pot and let the pressure release naturally for 15 minutes, release any additional pressure and remove the lid
  • Drain the beans and stop the cooking with cold water
  • Enjoy the beans in everything from a salad to chili to Mexican dishes
  • You can make any beans with this method - just change up the cooking time as follows: Black beans - 20 minutes large lima beans - 25 minutes Garbanzo beans - 35 minutes Small red beans - 20 minutes
