This quick, healthy, delicious hummus is a regular feature here in KilKenney Kitchen. It's perfect to bring to a party, pot luck or happy hour and receives rave reviews every time I make it. I think it will become an old standby in your kitchen too.

Ingredients
4 clovesgarlic
1largelemon
1/2cup tahini
215 oz cansgarbanzo beans
6dashesTabasco sauce
1tspsalt
Instructions
Peel and chop the garlic
Zest the lemon and cut the lemon in half
Bring on the tahini - A savory paste of ground sesame seeds with the consistency of peanut butter. You'll find it in the ethnic foods aisle of most large grocery stores.
Drain the garbanzo beans and reserve the liquid from the cans
Add the drained garbanzo beans, garlic, tahini, salt, the zest and juice of the lemon and the Tabasco sauce to a blender with a 1/2 cup of the reserved bean liquid. (Do you like my little kitchen owls?)
Blend the mixture, adding more reserved liquid, if necessary, until it has a smooth, creamy consistency. (if you run out of reserved liquid, add a little water). Taste the hummus and add more salt or Tabasco as needed. Sprinkle with a little paprika (if you have some on hand) and serve with vegetables or pita chips
