Place the box of thawed spinach in a colander and use a big spoon to squish as much water out as possible.
Place the spinach in a clean, dry dish towel, wrap in the towel and twist to squeeze the remaining water out, set aside
Place the 2 pounds of ground turkey in a large bowl
Grab the 6 oz of feta and crumble it into small pieces. I love this local MN feta made by Singing Hills Dairy. You will find feta in any large grocery store or Trader Joes as well
Add the drained and squeezed spinach, the crumbled feta,1 tsp dried oregano, 1/2 tsp salt and 1/2 tsp pepper to the turkey.
Gently mix the ingredients together - try not to overwork the meat as it can become tough
Form into 6 patties and place in the refrigerator while you heat up the grill. Keeping these burgers cold before you put them on the grill will keep them from falling apart.
Heat the grill (or grill pan) to medium-high heat. Brush the grill with a light coating of oil and place the burgers on the hot grill. Cook for 6 minutes - resist the urge to touch them before the time is up! (I obviously have a few more than 6 burgers here - I made a double batch - they make great leftovers)
Turn the burgers and cook for another 8 minutes or until cooked through - place them on a pan or platter and let them rest for 10-15 minutes
Serve the burgers with my Tzatziki Sauce (see the recipe index), your favorite salad (KilKenney Kale Salad is pictured here) and a bun - gluten free for me!.
