Let’s be honest – not all those chicken dinners are winners. If you’d like a detailed list, you are welcome to ask my family about the dry, bland, chewy chicken meals they’ve endured over the years as members of the KilKenney Kitchen sampling team.
Chicken is so often the answer to the “What’s for dinner?” question and for good reason. It’s inexpensive, relatively healthy and incredibly versatile. Chicken is on the menu, at least once, most weeks in our house. The challenge, at least for me, is coming up with a new, creative, delicious ways to prepare it.
This week, I decided to break out of my regular, albeit delicious, Roast Chicken and try something new – a recipe I remembered from a trip to Chimbote, Peru a few years ago. This prodigious Peruvian Chicken with Green Sauce is a wonderful way to bust a rut. It’s easy, different, beautiful and full of flavor. I hope you’ll love it as much as we did and it will become a new staple in your kitchen too.
