I don’t know about you, but I am not always my best self when real life interferes with my planned life. We had a lovely Thanksgiving, enjoying family, friends and too much good food. I was all set to make and share my favorite recipe for grapefruit and pomegranate salad on the blog today as a delicious way to lighten up before the next holiday food fest hits.
In our process of de-cluttering the house prior to family & friends arrival on Thursday, somehow my pomegranate disappeared. I looked everywhere yesterday – in the fridge with the grapefruits, on the counter where I left it, even some crazy places like the freezer and closet to no avail.
There may or may not have been some accusations leveled at Bill, whose speed at getting the house ready for company is unparalleled, but occasionally so thorough that we are still looking for things long after the event.
So… back to real life. When life gives you lemons you make applesauce right? At least that’s what I did. I bought a few pounds of second quality apples at the farmer’s market last week and decided to make a lovely applesauce to go with the last of our turkey leftovers. I am happy to share this wonderful recipe with you today. It pairs beautifully with chicken, pork or fish as well.
Stay tuned for the grapefruit/pomegranate salad later this month as the offending pomegranate was found on a shelf in the basement pantry late last night – hmmm…..not sure how that happened!
