For most of my life (OK about 57 years) I thought mushrooms were anything but marvelous. I think it was a texture thing for me. Call me crazy, but I’m not a fan of squeaky foods.
I’ve had something of an epiphany over the last year – perhaps an accompaniment to my gray hair, I’ve warmed up to the mushroom. Also – my family loves them and it dawned on me that I could be nice, at least once in a while!
In my cautious way, I began by adding dried mushrooms (decidedly not squeaky) to my homemade vegetable broth, soups and stews. After success with that, I decided to expand my mushroom horizons. I still can’t eat them raw and you’ve got to give me that they look kind of gross… right? But…..
In the spirit of opening my culinary mind, I created these Balsamic Glazed Mushrooms and they are, in fact, marvelous. Ready in a flash and the perfect addition to almost any meal (think Thanksgiving, Hanukkah, Christmas and every gathering in between) you’ll want to add these to your recipe box soon.
I will be back in two weeks with a round up of Thanksgiving recipes right before Bill and I head to Thailand for 10 days. To say I’m excited about the trip is a massive understatement. Had to laugh at your response to mushrooms. I hated them because as a child I’d only had ones from a can. Squeaky and squishy too! I still remember the meal my roommate in graduate school fixed using fresh mushrooms. Wow what a treat. Look forward to trying your recipe
