Super Simple Summer Salads

I may have hit my alliteration limit with this one!

Here in the upper midwest, summer has arrived and, needless to say,we’re ready for it. I, for one, am looking forward to a slew of salads.

This week, I made a visit to my favorite Asian Market – United Noodles in Minneapolis to grab wonderful, fresh ingredients for this easy, flavorful Vietnamese Salad Bowl.

United Noodles has reopened after being looted a couple of weeks ago and is, not only, a fabulous local market, the owners are a voice of support for the community – I encourage you to visit them in Minneapolis or Woodbury.

This Vietnamese Salad Bowl is my version of a recipe in Andrea Nguyen’s Vietnamese Every Day. It is my go-to for quick weeknight meals. Easy and delicious, you can adapt it to your taste with your favorite vegetables and proteins.
