I think I forgot how much I enjoy a stir fry. Easy, versatile and so delicious, they make a great weeknight meal. I have struggled over the years with the sauce component – soy sauce by itself is too salty and not thick enough, the whole cornstarch thing makes for a goopy sauce etc…So like the kitchen detective I am, I decided to play around with some ingredients that would make a delicious, thick sauce in a jiffy and sweet soy sauce with ginger was born. Who knew it would be so easy? A quick cook up of gluten free soy sauce, brown sugar and ginger creates a flavor filled sauce great with any combination of meat and/or vegetables. This Chicken Stir Fry with Sweet Soy Sauce is just one fabulous example.
I invite you to throw together your favorite ingredients with this sauce this week. I made a double batch and keep the leftover sauce in the fridge – ready at any time for a quick stir fry.
I also have some exciting news to share with you – KilKenney Kitchen is going live! I’ll be teaching classes this spring (April 19th and May 17th) at my favorite St. Paul co-op the Mississippi Market. I’d love you to join me. Click on the link and go to the classes tab to register. We’ll have a blast making a few great recipes that just happen to be gluten free.
