Few things fit the bill on a raw November night like a hot and hearty bowl of soup. Life gets measurably better if said soup tastes like it’s simmered all day , but is ready in less than an hour. Thanks to my handy, dandy Instant Pot pressure cooker, this rich, spicy and delicious Instant Pot Lentil Soup turns a Sunday supper into a weeknight wonder.
Chock full of vegetables and the last kale from my garden, this Lentil Soup was a warm, filling dinner and even better as lunch the next day. Add a little quinoa or shredded chicken for some extra protein and/or serve with your favorite whole grain bread. Enjoy!
