As you probably know, sheet pan dinners are all the rage. The concept is terrific – a one-pan dinner long on flavor and short on dishes – what could be better?
I’ve tried a few sheet pan suppers over the last couple of months and have ended up with crisp meat (mostly chicken), but soggy vegetables. It seems like the juices from the chicken overwhelm the veggies resulting in a mushy mess rather than a toasty triumph.
So I decided to switch it up a little and this Pork Tenderloin with Beans and Potatoes. By Jove I think I’ve got it!
The pork was tender and succulent, the beans and potatoes were roasted perfectly and the whole meal was ready in less than 45 minutes – a true win-win!
