Greek Chicken

This easy, delicious, sheet pan dinner will become a staple in your kitchen too. A snap to put together and rich in flavor, it's a keeper!

Ingredients

  • 1 pound boneless, skinless chicken breasts cut into 1" chunks
  • 1 large red pepper cut into 1" chunks
  • 1 large orange pepper cut into 1" chunks
  • 1 large zucchini cut into 1" chunks
  • 1 large red onion Sliced Thickly
  • 2 tablespoons extra virgin olive oil
  • 1/2 large lemon juiced
  • 1 tablespoon red wine vinegar
  • 2 large cloves garlic minced
  • 1 tablespoon oregano
  • 1 pinch kosher salt
  • 1 pinch ground black pepper
  • 1/4 cup crumbled feta cheese
  • 1/2 cup fresh cilantro optional

Instructions

  • Preheat the oven to 400 degrees
  • Place the chicken in a large bowl and add the olive oil, lemon juice, oregano, salt and pepper and let sit while you cut the vegetables
  • Place the vegetables in a large bowl and add the chopped garlic along with a sprinkle of salt and pepper
  • Combine the chicken and vegetables and stir to combine
  • Place the chicken and vegetables on a sheet pan sprayed with a little cooking spray or covered in parchment paper
  • Bake for 15-20 minutes until the chicken is just firm to the touch
  • Serve with a sprinkle of feta cheese, cilantro and your favorite side of rice, quinoa or pasta. So good!
