A Super Sheet Pan Supper!
Greek Chicken
This easy, delicious, sheet pan dinner will become a staple in your kitchen too. A snap to put together and rich in flavor, it's a keeper!
Ingredients
- 1 pound boneless, skinless chicken breasts cut into 1" chunks
- 1 large red pepper cut into 1" chunks
- 1 large orange pepper cut into 1" chunks
- 1 large zucchini cut into 1" chunks
- 1 large red onion Sliced Thickly
- 2 tablespoons extra virgin olive oil
- 1/2 large lemon juiced
- 1 tablespoon red wine vinegar
- 2 large cloves garlic minced
- 1 tablespoon oregano
- 1 pinch kosher salt
- 1 pinch ground black pepper
- 1/4 cup crumbled feta cheese
- 1/2 cup fresh cilantro optional
Instructions
- Preheat the oven to 400 degrees
- Place the chicken in a large bowl and add the olive oil, lemon juice, oregano, salt and pepper and let sit while you cut the vegetables
- Place the vegetables in a large bowl and add the chopped garlic along with a sprinkle of salt and pepper
- Combine the chicken and vegetables and stir to combine
- Place the chicken and vegetables on a sheet pan sprayed with a little cooking spray or covered in parchment paper
- Bake for 15-20 minutes until the chicken is just firm to the touch
- Serve with a sprinkle of feta cheese, cilantro and your favorite side of rice, quinoa or pasta. So good!
