Christmas Carrots
These beautiful carrots are the perfect side dish for your holiday table. Savory and a touch sweet, they taste as good as they look.
Ingredients
- 2 pounds carrots
- 1 tablespoon olive oil
- 1 large clove garlic minced
- 1 teaspoon sugar
- 2 sprigs fresh thyme or 1 teaspoon dried thyme
- 1/2 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 1 medium lemon
Instructions
- Peel and cut the carrots on the diagonal in 1/4" pieces
- Grab the thyme sprigs, or teaspoon of dried thyme (and glass of wine if you feel like it!)
- Add a tablespoon of olive oil to a sauté pan, add the garlic and cook for 30 seconds
- Add the carrots, 1 teaspoon of sugar, 1/2 teaspoon of salt and 1/4 teaspoon of pepper
- Cover and cook until they begin to soften slightly 5-10 minutes. Check and stir often
- Sprinkle with the thyme leaves or teaspoon of dried thyme and cook, uncovered, until the carrots are al dente or as soft as you like - another 5-10 minutes
- Squeeze the lemon juice over the carrots and stir to combine the flavors. Taste and adjust the seasonings as needed
- Serve with your favorite meat or fish and enjoy! These make a lovely addition to your holiday table too.
