I am a risotto regular. As a woman with Celiac Disease, for years, risotto was my go-to order in an Italian restaurant. I love risotto in all it’s variations – from plain with a touch of parmesan to mushroom, to shrimp to butternut squash. Versatile and delicious…I’m a fan.
I’ve been making risotto at home for years – most often on a Sunday night as it’s a bit of a process – lots of heating, stirring and watching but worth every minute to get to that delicious outcome.
Well, this week the Instant Pot rocked my risotto world. I taught a class on Tuesday night and played around with a risotto recipe for fun. I was amazed at the results. Rich, creamy, tender, no stir risotto in less than 20 minutes – Wow!
I invite you to dust off that Instant Pot this week and give this Instant Pot Risotto a try. Next time, I’m adding mushrooms, pancetta or peas – endless possibilities!
