Vegetarian Enchiladas (GF/Vegan*)

It’s finally fall and this Vegetarian Enchiladas dish is perfect for busy nights. Zucchini, black beans, corn, onions, peppers and cream cheese are mixed with homemade red enchilada sauce, rolled in corn tortillas and sprinkled with Mexican cheese.  Served with Mexican rice – Serves 2 *Can be made vegan upon request – please make the request in the notes on your order
