Excellent Egg Salad (GF)

This fabulous egg salad is the perfect solution to a hot summer night or weekday lunch.  Farm fresh, hard boiled eggs are mixed with mayonnaise, mustard, Greek yogurt and a touch of dill for a light, delicious summer salad. Served with mixed greens and a fresh, local Trung Nam baguette – One pound makes 2-3 sandwiches or salads.
