I heard my father’s voice saying “necessity is the mother of invention” this week when I pulled a bucket of leftover cherry tomatoes from the back of the refrigerator.
I made bowlfuls of the ever-popular Great Greek Salad last week for Charlie’s graduation party. I managed to moderate my tendency to over-buy ingredients, except, apparently, for the tomatoes. (Ok and a ton of homemade Greek salad dressing I’ve been giving away and using to marinate everything that’s not nailed down!)
Never one to waste food, I remembered an idea my friend Katie shared with me about roasting tomatoes. So off I went. These incredibly delicious Roasted Cherry Tomatoes will now be a staple in KilKenney Kitchen. They taste fantastic, work for everything from an appetizer to a pasta sauce to sandwich filling and, as a bonus, your kitchen will smell AMAZING!
