I don’t know about you, but I’m good and sick of Thanksgiving food by the end of the weekend. I can’t eat another bite of all those traditional dishes, and I’m ready to lighten things up a bit before the next holiday food fest begins.
My mother always made a fabulous turkey soup after Thanksgiving. I don’t remember her using a recipe, but I can still see her dumping just about every container of leftovers into that pot, adding a few vegetables and some barley (alas…..not gluten free) and letting it cook for hours.

This Leftover Turkey Soup is my take on her “everything but the kitchen sink” approach. I, of course, needed to make it gluten free, so I substituted rice for the barley. I added some leftovers including gravy and gluten free stuffing and let it cook for a few hours. The result is a light, delicious turkey soup perfect for lunch or dinner.
